Emese and Nandi welcome you at My Pure Plants, the home of plant-based recipes!
We are a wife and husband duo cooking and baking together. We will share with you week by week what we cook and bake in our kitchen for ourselves and for our 3-year old and 3-month old daughters. All recipes are plant-based recipes. They will be suitable for vegans and vegetarians and for anyone who has to eat egg-free and dairy-free. On top of these, all recipes will be gluten-free too.
We had several turning points in our life that got us closer to where we are and what we eat today.
In 2014 Emese was diagnosed with coeliac disease and we had to embark on an (at first) very frightening journey of how to eat gluten-free. Getting to know all those new ingredients, cooking and baking processes that were unfamiliar to us. Apart from some old-fashioned homemade bread and similar dishes, the whole family eats gluten-free since then.
At the end of 2015, our little daughter was born and our perspective shifted. We wanted to give her the healthiest upbringing possible. We had a well-balanced diet before (at least we thought we had…) but for her sake, we definitely turned away from as much processed and artificial food as possible and tried to replace with organic ingredients from known local sources.
Our final milestone was during the summer of 2017 when Nandi watched “Forks over Knives” and “What the Health”. We read about the health benefits of a plant-based diet a lot (like here and here). We have been already health-conscious and food enthusiast with an appetite for almost anything, so we started to try and incorporate as much plant-based dishes as possible to our everyday life.
UPDATE: Another milestone happened in our life. We welcomed our second daughter. She was born in October 2018. (Have you seen my favorite lactation smoothie recipe?)
So here we are, writing a blog and sharing plant-based recipes. We invite everyone to join us to explore, to indulge in and to celebrate with us this wonderful variety of plant-based food. We hope to provide inspiration to anybody who would like to try new recipes, any vegans, vegetarians, and anyone who has to eat gluten-free, egg-free or dairy-free.
Emese is the sweet tooth of this family loving everything that can even remotely be called a dessert. So no surprise is here, but she is the one bringing you all things baking. She enjoys experimenting with desserts, adding special ingredients or flavors and shaping them into her taste. She works with precise measurements and hates recipes where they say “to taste”. She loves the feeling of mixing all ingredients together and having only one shot to turn them into something tasty. She is the kind of baker who likes watching how high the dough slowly rises in the oven or screams when flipping the pancake reveals a perfect golden brown color. Besides desserts, she also writes about recipes for savory pastries like pizza dough, bread, crackers etc. or breakfast recipes like smoothies, oats, pancakes etc.
When it comes to the main dishes Nandi is your guy. He is the intuitional cook of this family, who doesn’t really like to follow recipes. To be honest, he never does. He loves the feeling of opening the pantry door, choosing random ingredients and finding the right combination. He likes to try new foods, new ingredients, and new flavors. When he cooks, he tastes it several times before a dish is ready refining the flavor, the texture as he goes. Although he loves to be in the kitchen every day, he doesn’t like to spend too much time there at once. Most of the recipes will be between 30 minutes to 1 hour of cooking time. He creates recipes for salads, soups, sandwiches, lunch and dinner dishes.
About following a plant-based diet…
In the transition of becoming more and more plant-based, one thing we both experienced (besides the obvious very positive side effects) was that it requires more thorough planning of all the individual meals in order to make sure our bodies don’t lack any nutrition. Common things we have seen in many people around us and in different social media platforms were that people just randomly left out meat/dairy products from their everyday lives without proper substitution. This resulted in several negative symptoms like fatigue etc. and eventually them turning away from plant-based food.
As our daughter eats exactly the same food as us – when she is not in a picky mood – it is extremely important to us to make sure she does not miss any nutrition. So when it comes to recipes we always try to incorporate as many healthy ingredients as possible to make sure we keep our good health in the long run.
