What are Nachos?
The original Nachos are soft corn tortilla triangles deep fried or baked with melted cheese on top. It was created by Ignacio Nacho Anaya hence the name Nacho. Later on several versions were invented with an array of nacho toppings to choose from. If you want to try the authentic recipe, here is one over at Mely’s blog called Mexico In My Kitchen.
Vegan Nacho Toppings
The best part about making nachos vegan or making nachos at all, that you can mix and match depending on how do you like them.
We like our Nachos if it is crunchy, a bit spicy, with a hint of fresh veggies, loaded with a mix of savory and sweet toppings at the same time, and of course cheezy and satisfying.
Let me list you a couple of topping suggestions we usually add depending on our taste and mood. You can choose anything and everything to make your own. So here it goes:
- Soft tortilla triangles or tortilla chips
- Shredded vegan cheese
- Vegan Nacho Cheese Sauce or Vegan Queso Dip
- Salsa sauce of any kind (mild or hot or even a Tomato Salsa Fresca aka Pico De Gallo)
- Freshly chopped tomato and bell pepper
- Freshly chopped purple onion or spring onion
- Sliced jalapeno pepper
- Avocado slices or Guacamole (we have a guacamole recipe in our Copycat Chipotle Veggie Bowl post)
- Refried beans or canned/cooked black beans
- Hot sauce
- Dairy-free Sour Cream
- Meatless sausages
- Vegan Shredded Chicken
- Vegan taco meat
- Cauliflower, Walnut or Mushroom Mince as a truly whole food plant-based alternative – we use them in our Vegan Spaghetti Bolognese recipe, but add fajitas or taco seasoning instead or Italian,
- TVP (Textured Vegetable Protein) – we use them in our Cabbage Lasagna recipe, but again add fajitas or taco seasoning instead or Italian,

Is there a vegan and gluten-free tortilla?

How to make Vegan Nachos quickly?
Originally, soft tortilla has to be cut into triangles and baked or deep fried. However, we prefer to us tortilla chips that is already crisp. Therefore, no further baking is needed and time is saved. Win-win.
We spread the tortilla chips in one layer (photo #1). Add diced vegan sausage (photo #2). Then, chopped bell peppers/tomatoes (photo #3). Add a couple of jalapeno pepper slices (photo #4).
Next up are chopped onion/spring onion (photo #5). Add avocado slices or guacamole (photo #6). Drizzle it with some salsa sauce (mild or hot depending on your taste) (photo #7). Finally, add the must-have ingredient: vegan nacho cheese sauce (photo #8).
Top tips to make perfect Loaded Vegan Nachos
- Use tortilla chips instead of soft tortilla for a quicker finish.
- Not suitable for prepping it in advance. We recommend prepping all ingredients separately, but only assemble the nachos plate right before serving. Leftover nachos are soft, mushy and gross, so make as much as you can eat at one go.
- Sprinkle it with fresh cilantro for an extra zing.
- Serve sour cream on the side. If you add vegan cheese sauce, salsa and even guacamole, there will be too much sauce and the tortilla will get soft and mushy in record time.
This Vegan Nachos recipe is meat-free, dairy-free, and egg-free. It is also suitable for vegan, vegetarian, nut-free, and gluten-free diets. It can also be WFPB-friendly (whole foods plant-based) if you don’t use olive oil.

Ingredients
- 3 bag Tortilla chips (5-oz bag)
- 1 Avocado
- ½ Bell Pepper diced
- 2 Jalapeño pepper sliced (optional)
- 1 Vegan sausages
- 1 Spring onion
- ¼-1/2 cup Salsa or more depending on your taste
- ¼-1/2 cup Nacho Cheese Sauce or more depending on your taste
