    What to expect?

    Fajita veggies in Chipotle are easier to make at home than you might think. Surprisingly or not, you need only five ingredients, and not one of them is a fajita spice blend. Maybe it is not a surprise, since you know that the fajita veggies in the restaurant are not hot and spicy at all.

    We found two discussions on Reddit, where Chipotle employees chimed in and shared how they make it in the restaurant. And we followed their instructions to the T. Here is what they had to say about this popular side dish:

    • The ratio they use to prepare fajita veggies is 2 lbs of red onions to 3 lbs of bell peppers.
    • Most restaurants only use green bell peppers, but in several establishments, they mix green ones with red and yellow.
    • The only seasoning you require is oregano.
    • Fajita veggies are prepared on high heat to lightly caramelize the onions, and the bell peppers are charred on the edges. However, the bell peppers should remain a tad crunchy and not soggy.
    • They previously used rice oil, but now they use sunflower oil.

    Ingredients

    The ingredients of chipotle fajita veggies are placed in small glass bowls like red and green bell pepper strips, red onion slices, dried oregano, and oil.
    • Bell peppers
    • Red onion
    • Sunflower oil
    • Oregano
    • Salt

    Instructions

    Cutting bell peppers and onions

    1. Wash the bell peppers.
    2. Use a sharp knife and cut both ends off.
    3. Now, cut them lengthwise and remove the stems and seeds.
    4. Flat the bell peppers gently and slice them evenly into thin strips.

    1. Peel red onions, then cut them in half.
    2. You can use a handy gadget called the onion holder to make sure you can cut even slices.

    Frying fajita veggies just like Chipotle

    1. Take a frying pan or large skillet and heat it on high heat.
    2. Add 1 Tbsp of sunflower oil.
    3. Add sliced bell peppers and red onions. Stir well. Fry them for 2-3 minutes.

    1. Add oregano, salt, and black pepper. Stir well. Fry for another 1-2 minutes.

    Cooking tips

    • High heat – If you use low or medium heat, the bell peppers will be sauteed rather than charred. They will be soft and not crunchy.
    • Stir frequently – Since high heat is involved, you cannot leave it unattended. You need to stir it constantly, but in return, they will be ready in 5 minutes!
    • Add oregano at the last minute – The herbs may burn if you fry the veggies with dried herbs from the start. Only add the oregano when the onion is caramelized and the bell peppers are a bit charred.

    Variations

    The only variation the restaurant allows is the type of bell pepper they use. Green bell peppers are the most common one, but many locations offer a mix of green and red, and even yellow.

    If you want the exact copycat chipotle fajitas veggies, then follow the recipe as it is. If you like spicy, you can add chili flakes or fajita seasoning (hot chili powder or chili flakes, sweet smoked paprika, cumin, garlic powder, and oregano).

    Serving ideas

    You can use these fajita veggies (Chipotle) to make a sweet potato rice bowl, a vegan burrito bowl (see the below photo), or a veggie burrito along with the following add-ins:

    • cilantro lime rice
    • black beans or pinto beans
    • sofritas (spicy braised tofu crumbles),
    • plant-based chorizo
    • fresh tomato salsa, tomatillo green, red chili salsa, or roasted chili corn salsa
    • guacamole
    • vegan sour cream
    • vegan queso dip
    • lettuce
    • shredded vegan cheese
    • flour tortillas (flourless red lentil tortillas) or tacos

    Equipment

    A cast iron skillet or a wok is the best equipment to fry vegetables on high heat. Wok is specially designed for high-temperature stir-frying, and it has several advantages. The sloping sides make flipping and tossing easier. It heats up quickly and evenly and is perfect for a large batch. The main advantage of a cast iron skillet is that it can maintain a consistently high temperature even when food is added to it. Making frying quick and even.

    Storing tips

    How to store leftovers? Bell peppers remain crunchy only for a short amount of time. It doesn’t matter how you store them, they will become soft and soggy. It is best to prepare them fresh since it doesn’t take much time to do it. If you don’t mind losing the crunchiness, you can store them in airtight containers in the refrigerator for 3-4 days without any problems.

    Are fajita veggies in Chipotle vegan?

    Yes, they only use five ingredients: sunflower oil, bell peppers, red onions, oregano, and salt. However, how fajitas veggies are prepared in each location and whether cross-contamination occurs or not is another story. Which means are there accidentally chicken pieces? Or do they use different equipment and utensils for cooking meat and vegetables?

    How does Chipotle make its fajita vegetables?

    Instructions
     

    Prepare the vegetables

    • Cut the end of the bell peppers, then halve them lengthwise. Remove the stems and seeds. Slice them into thin strips.
    • Peel and slice the purple onion.

    Frying fajita veggies

    • Take a frying pan and heat it on high heat. Add oil.
    • Add sliced bell peppers and onions. Stir well. Fry them for 2-3 minutes.
    • Add oregano, salt, and black pepper. Stir well. Fry for another 1-2 minutes.
    • Ultimately, the onion should be slightly caramelized, and the bell pepper strips should be charred on the edges.
