What to expect?
This Mediterranean inspired pizza is no ordinary one, as it is actually a hummus pizza. It means that the usual tomato-based pizza sauce is exchanged for homemade hummus. The toppings are also typical ingredients for Mediterranean cuisine like olives, feta, cherry tomato, and basil.
But what will it taste like? The creamy hummus adds a savory and slightly nutty flavor to the traditional pizza base and toppings. Warm hummus will feel nice with melted feta cheese on top. The sweetness of the cherry tomatoes and the onion will balance the salty olives and feta. The fresh basil leaves will give a herby freshness with a crunch.
While we used classic hummus, don’t stop there and try it with different flavors like beet hummus, sunflower seeds hummus, harissa hummus (from our falafel platter), or roasted red pepper hummus (from our grazing board).
Ingredients
Here is what you need to make a pizza that looks exactly like the one on the picture:
- Pizza dough (homemade or store-bought) or if you need a gluten-free pizza crust
- Hummus (homemade or store-bought) – We used our oil-free hummus recipe
- Feta cheese – We used Violife feta cheese*, but feel free to use your favorite brand.
- Pitted olives – We used both green and black olives, because we love them :-). But if you can, try Kalamata olives (large purple ones), they are so delicious.
- Cherry tomatoes
- Red onion
- Fresh basil

Instructions
Preparing the pizza dough
If you use your own pizza dough, follow the recipe or package instructions up until the point the dough has been rolled out.
If you try our gluten-free pizza crust recipe, you need to pre-bake the crust before adding any sauce or topping. Preheat the oven to 390 Fahrenheit (ca. 199 °C) and pre-bake it for AT MOST 3 MINUTES!!! Just until the top dries up a bit, and you can spread the pizza sauce on it. Spreading the hummus
You can use homemade hummus or store-bought hummus. If you want to spice it up, you can even choose a flavored hummus. In this recipe, we made from scratch our oil-free hummus. Since it is made with aquafaba it is extremely creamy and smooth.
Spread 3-4 tablespoons of hummus on the pizza. Unlike with a thin tomato-based pizza sauce, we recommend that hummus covers the whole crust in a thin layer.
Adding toppings
After spreading a generous layer of hummus, prepare the toppings and scatter them on it. Since it is a Mediterranean pizza, we selected them accordingly, but you will find many more ideas under the Toppings section.
- Wash and cut cherry tomatoes in half.
- Crumble feta cheese with your fingers.
- Cut olives into rings or leave them as a whole.
- Wash, peel, and slice red onions.
Baking tips
To bake your Mediterranean hummus pizza first pre-heat the oven to 390 Fahrenheit (ca. 199 °C) temperature. I find that 15 minutes should usually be enough to bake the crust crispy and melt the feta cheese. Adjust baking time depending on what kind of dough or toppings do you use.
More topping ideas
The Mediterranean basin is fortunately large, including Spain, Portugal, Italy, Greece, part of the Middle East, and North Africa. So many delicious ingredients to choose from. Here are some of our favorite toppings to add to this pizza.
- Raw vegetables like thinly sliced eggplants, red bell pepper, zucchini, mushrooms, or asparagus.
- Leftover roasted vegetables: Hummus pizza or any pizza for that matter is perfect for using up your leftovers creatively. You can think. of anything here, since they are already roasted, go for hard veggies that otherwise are not suitable for pizza like broccoli, sweet potato or even butternut squash.
- Canned vegetables: sun-dried tomatoes, artichoke hearts, or capers.
- Legumes: chickpeas, beans (cannellini, kidney, fava…), and lentils are quite popular in Mediterranean cuisine. We do love them on pizza. Use canned or cooked versions, but hide them under the cheese so that don’t dry out.
- More cheese: mozzarella cheese in place or in combination with feta cheese.
- Fruits: figs are amazing on pizza. If you haven’t tried it, you should.
- Fresh herbs or leafy greens: You should only add them after baking. They will slightly wilt on top of the hot pizza, but gives an extra layer of herby, fresh flavor. We always add baby spinach, arugula (aka rocket salad) or fresh basil leaves.
- Pesto: A swirl of this spinach pesto or this sun-dried tomato pesto will give a fantastic flavor boost to any hummus pizza.
Serving ideas
When the pizza is baked and out of the oven, you can add even more yummy things on top.
- Chop fresh basil or leave them as whole leaves and scatter them on top of your baked Mediterranean pizza (see below picture).
- We love to add spinach leaves or arugula (aka rocket salad) to any pizza we make. This one is no exception.
- You can drizzle it with extra virgin olive oil or balsamic vinegar.
- Brush the crust with melted garlic butter while it is hot.
- Add some parmesan.
- If you like it spicy, sprinkle some chili flakes or drizzle it with sriracha or other hot chili sauce.
- Add a side salad like this quinoa berry salad, or serve it after a creamy vegan soup.
Equipment
- We baked this pizza both on a non-stick silicone baking sheet and on a sheet pan lined with parchment paper. We love how easy it is.
- Use a pizza stone* for an extra crispy bottom.
- If you use a pizza stone, we recommend using a pizza peel* as well so you can transport the pizza to the stone easier.
- Once baked, move it to a wire rack or wooden board to cool down. The wood can absorb the moisture or steam coming from the hot pizza. You will not lose the crispiness this way.
- Cut it with a pizza wheel* or a very sharp knife.
Storing tips
Pizza is best right out of the oven. You can store leftovers for up to 2-3 days in the refrigerator in an airtight container or wrapped in tin foil.
It may largely depend on the pizza dough you choose, but we don’t usually recommend freezing any pizza. After thawing, the crust can get soggy if the dough or the toppings (even baked ones) release any moisture.
To reheat frozen or cold pizza, don’t use a microwave, but use a toaster oven or a regular oven to get back some of the crispiness you lost.
FAQs
Any hummus can work as a pizza sauce, from classic to flavored. We did not experience any difference compared to using homemade hummus or store-bought hummus. Both were creamy enough to spread evenly.
Hummus is a Middle Eastern dip, so any vegetables, legumes, or even fruits that you would dip in it, are also perfect as a pizza topping. We recommend olives, tomatoes, red pepper, sun-dried tomato, artichoke hearts, onion, spinach, or eggplant.
