    This easy cheeseless pizza recipe puts a fun and nutritious twist on traditional pizza and is a meal the whole family will love! In just 30 minutes or less, you will have a delicious veggie- and flavor-packed pizza without the dairy. It is the perfect answer to a quick, family-friendly meal!

    What to expect?

    Who said that you need cheese to make a good pizza? This recipe will prove the exact opposite: A cheeseless pizza can be just as delicious and versatile as mozzarella cheese-packed pizzas from your local pizzeria! 

    In place of cheese, we top tender and crunchy pizza dough with flavorful sauce, colorful veggies, and tender gyro “meat” made from oyster mushrooms. We then bake it to perfection in 15 minutes or less. It is so good you won’t even notice the cheese is missing!

    Ingredients

    This easy cheeseless pizza recipe only requires nine simple ingredients. However, you can add or omit ingredients based on your personal taste! Check the Variations section for more ideas on how to dress your pizza.

    • Pizza dough – You can use store-bought dough, but nothing beats homemade. Try our easy Neapolitan pizza dough recipe or our best-ever gluten-free pizza crust.
    • Pizza sauce – Our no-cook tomato pizza sauce takes just five minutes!
    • Zucchini
    • Bell pepper – You can use yellow, orange, green, or red bell pepper, orange, or green peppers (or a combination of all three)!
    • Red onion (medium)
    • Oyster mushrooms 
    • Asparagus
    • Greek seasoning
    • Semolina flour – You will use this for dusting the dough.

    Instructions

    Making cheeseless pizza

    1. Wash and slice the zucchini and bell pepper. Then, peel and size the red onion. Lastly, tear the oyster mushrooms into shreds.
    2. Wash and snap the end of the asparagus off. Cut them into 3-inch long pieces.
    3. Pan-fry the zucchini, bell pepper slices, asparagus, and oyster mushrooms. We used the seasoning from our vegan gyros recipe.
    4. If you use our homemade pizza dough recipe, make the dough and proof it according to the instructions there. Then continue from here.
    5. Place the dough on a flat, lightly floured surface and lightly dust it with semolina or cornmeal. Sprinkle the top with flour, if needed (or turn the dough upside-down).
    6. Use your fingertips to gently depress the dough ball while stretching and pulling to create a 10-inch circle (approximate). If you prefer a bubbly outer crust, do not depress the edges.

    1. Preheat the oven to 390 Fahrenheit (ca. 200 °C).
    2. Line a baking tray with parchment paper and transfer the pizza crust dough to the tray by hand. Gently arrange it back to a circle shape.
    3. Spread the pizza sauce across the dough evenly. Add the grilled zucchini, asparagus, oyster mushroom, bell pepper, and red onion on top.

    1. Bake for 10-15 minutes or until the outer crust starts to turn color. Can you see the airy, fluffy crust?

    Cooking tips

    • Use a pizza stone! – We recommend using a pizza stone in the highest position of the oven since you will have the best pizza if you can manage to bake it on the highest heat possible. The pizza stone is already hot when you place the pizza dough on top resulting in a perfect crispy bottom crust. Read our pizza dough recipe for more details on how to bake a pizza with a pizza stone.
    • If you prefer not to have a bubbly outer crust, poke small holes in the crust with a fork before putting it in the oven.
    • Use umami toppings with a “meaty” texture for the best flavor and pizza.
    • Once baked, move it to a wire rack or wooden board to cool down while preserving the crust’s crispiness.

    Variations

    There are many ways you can dress up this cheeseless pizza. Whether you have a dietary restriction or preference or want to change up the flavor, you can customize it by trying one or more of the variations below:

    • With different sauce: Instead of tomato sauce, use a swirl of spinach pesto or sun-dried tomato pesto. Or, spread on creamy hummus as we do in our Mediterranean hummus pizza recipe.
    • With different veggies – Add other fresh and flavorful veggies, such as sliced and roasted eggplant, roasted mushrooms, broccoli, sweet potatoes, or butternut squash. You can also use canned vegetables such as sun-dried tomatoes, artichoke hearts, black olives, or capers.
    • With fruit – Believe it or not, fruit is another delicious topping for pizza! Try topping your pizza with sliced pineapple, berries, or figs.
    • With fresh herbs or leafy greens: For extra flavor, sprinkle on fresh herbs such as fresh basil, oregano, or arugula after baking. You can also add fresh spinach leaves to make it even more nutritious!

    Serving ideas

    • Before serving, drizzle the pizza with extra virgin olive oil or balsamic vinegar.
    • Brush the crust with melted garlic butter while it is hot.
    • Add a kick of spice by sprinkling on crushed red pepper flakes or drizzling it with sriracha or other hot chili sauce.
    • Serve it alongside a leafy green side salad or our fruity quinoa berry salad.

    Equipment

    • Iron pizza stone – A pizza stone give the pizza an extra crispy bottom.
    • Pizza oven – If you do not have a pizza oven, you can use a regular oven as we do in this recipe. While Ooni pizza ovens are quite popular, we have a cheaper brand. And it gives us delicious pizzas effortlessly.
    • Baker’s peel – Using a pizza peel makes transporting the pizza to the pizza stone easier.

    Storing tips

    While pizza is always best when served fresh and hot out of the oven, the good news is that you can still enjoy it later if you have leftovers! For food safety, you should not attempt to store any pizza left at room temperature for more than two hours.

    In the refrigerator – Wrap leftovers in tin foil or store in an airtight container and place in the fridge for up to three days.

    In the freezer – I do not recommend freezing pizza, as the crust can become soggy if the dough or the toppings release any moisture.

    Reheating cold pizza – For the best quality, reheat cold pizza in a regular oven or toaster oven to maintain a crispy crust. I do not recommend reheating it in the microwave as the crust tends to become soggy.

    FAQs

    Can I make cheeseless pizza in advance?

    You can make cheeseless pizza in advance and store it in the freezer like a grocery store frozen pizza. Reduce the baking time to 5-6 minutes, which will allow the dough to cook enough to keep its shape but will not cook it all the way through.

    Is cheeseless pizza gluten-free?

    You can make this pizza gluten-free by using a gluten-free pizza crust and choosing toppings that you know are gluten-free. You can never go wrong with choosing vegetables since all types are gluten-free.

    • 1 Pizza dough homemade classic or gluten-free
    • ½ cup Pizza sauce easy no-cook pizza sauce
    • ¼ Zucchini
    • ½ Bell Pepper
    • ¼ Red onion (medium)
    • 6 oz Oyster mushrooms
    • 6 oz Asparagus
    • 1 tsp Greek seasoning
    • Salt and Pepper to taste

    Instructions
     

    Prepare the toppings

    • Wash and slice the zucchini and bell pepper. Peel and slice the red onion. Tear apart oyster mushrooms. Wash and snap the end of the asparagus off. Cut them into 3-inch long pieces.
    • Pan-fry zucchini, bell pepper slices, asparagus, and oyster mushrooms with your chosen seasonings. We used the seasoning from our vegan gyros recipe.

    Making cheeseless pizza

    • If you use our homemade pizza dough recipe, make the dough and proof it according to the instructions there. Then continue from here.
    • Transfer one ball of dough to a flat surface dusted with semolina or cornmeal. Sprinkle the top with flour if needed (or simply just turn the dough upside-down). Use your fingertips to gently depress the round, stretching and pulling the dough gently into a circle. For a bubbly outer crust, don’t depress the outer circumference.
    • Preheat the oven to 390 Fahrenheit (200 degrees Celsius).
    • Add parchment paper to a baking tray, and transfer the pizza crust with your hand to the tray. Gently arrange the crust back to a circle shape.
    • Spread pizza sauce evenly on the crust. Spread grilled zucchini, asparagus, oyster mushroom, bell pepper, and red onion on pizza sauce.
    • Bake it for 10-15 minutes or until the outer crust gets some color.
