    Preparing the ingredients

    STEP 1

    Then, transfer this sauce to a blender and blend it until it is smooth. Return the sauce to the pan.

    To store, allow the dish to cool completely. Once cooled, transfer the pasta and the peperonata sauce to separate airtight containers. You can store the pasta in the refrigerator for 3-4 days. The peperonata sauce can be refrigerated for the same amount of time.

    I don’t recommend freezing the assembled dish as the texture of the vegetables and the pasta may become mushy when thaw. However, you can freeze the peperonata sauce. Just be sure to do so in an airtight container and consume it within 3 months.

    To reheat, simply warm the pasta and the peperonata sauce in a pan over medium heat. If the sauce seems a bit dry, you can add a splash of water or vegetable broth to loosen it up.

    • 12 oz Casarecce pasta
    • 2 Tbsp Olive oil
    • ½ Onion
    • 3 cloves garlic
    • 1 Bell Pepper
    • ⅓ cup Sieved tomato puree aka Tomato sauce
    • ¼ cup Red wine
    • ½ cup Pasta water
    • 1 tsp Basil
    • 1 tsp Oregano
    • 1 tsp Dried parsley
    • 1 tsp Cane sugar
    • Salt and Pepper to taste

    Instructions
     

    Preparing the ingredients

    • Peel and chop the onion. Peel and mince garlic cloves.
    • Wash and slice bell pepper.
    • Cook pasta according to package instructions.

    • Finally, add pre-cooked pasta. Stir well.
