Before cutting oyster mushrooms, it is important to prep them. Since they grow on wood, they are not dirty. Just trim any tough or woody stems and the mushrooms are ready for cutting. For more detailed steps, check out this guide on how to prepare oyster mushrooms.

    Using the whole cluster

Due to how tender and small pearl oyster mushroom caps are, they also do just fine when used in a recipe whole like in our teriyaki oyster mushroom steak recipe.

    Separating all caps

Use your hands to separate the cluster into caps and prepare this yummy pan-fried oyster mushroom recipe. It is the easiest recipe you can choose as they are just tossed together with olive oil, garlic cloves, green herbs like thyme, and a bit of salt and pepper and fried in a cast-iron skillet over medium-high heat.

    Shredding pearl oyster mushrooms

They are quite delicate, so use your hand and shred the clusters along their large gills using your hand into ½-inch thick strips.

You can them use in any stir-fry or pasta recipes such as this oyster mushroom tacos, cajun oyster mushroom pasta or fajitas.

    Shredding king oyster mushrooms

Just place the king oysters on a wooden surface and use a fork to make thin strips. The cap is usually harder to use a knife to cut the part into thin slices. Just like in the below photo.

    Cutting king oysters lengthwise

Since they have a meaty texture, you can make king oyster mushroom steak by cutting them lengthwise and roasting them in the oven or sauteeing them in a skillet. You can also add them to pho soup or ramen.

    Slicing king oysters into rings

If you cut them into rings, you can fry them or roast them until crispy and chewy. This is the way to prepare them if you want to make vegan scallops or vegan yakitori skewers.
