Quick Spinach Pasta Sauce
15-minutes spinach pasta sauce with only 5 main ingredients. It is sweet and crunchy, but creamy and filling at the same time. It is one of the quickest meal you can have for lunch or dinner.

- 1 Tbsp Olive oil
- 1 Spring onion
- 1 1/2 cup Sugar peas / Snow peas / Mangetout any peas with edible pods
- 1 cup Sweet corn (canned)
- 1/2 cup Spinach (frozen)
- 1 cup Dairy-free cream
- Garlic powder
Cut the spring onion into thin strips.
Heat up a frying pan or wok and add olive oil.
Cook spring onion for a few minutes.
Add the sugar snap peas and season with salt, pepper and garlic powder.
Add thawed spinach and sweet corn and mix well.
Cook them for another couple of minutes, then add the dairy-free cream. Wait until it's boiling and check if additional seasoning is required.
Add cooked pasta of your choice (we used rice noodles) and blend them together. Serve it with vegan parmesan cheese.
- If you are cooking this recipe also in a wok, make sure to heat it up before adding any ingredients. Once the wok is hot, you can turn back the heat to medium, but ALWAYS stir continuously.
- You need to thaw the frozen spinach. However, we buy frozen spinach that is packed in ice cube sizes. In that case, you can toss the frozen spinach cubes into the wok and thaw them while cooking.
